Vols 1 & 2: The Professional Kitchen, Vol 3: The General Trade Knowledge. Originally published in Basel, 1948-49 under the title "Berufskunde" fur die Hotellerie und das Gastwirtschaftsgewerbe, under the patronage of the Swiss Hotel Association, etc. etc. Vols 1,2 & 3 in blue, red & black cloth. Gilt title and decorations (Edelweiss) bright on front boards, less bright on spines, esp vol 1. Edges show a little spotting, each front paste-down previous owner name/date ("Jack Hoffmann, Olympic Hotel, 1960"). Photos & color plates. Occasional marginal notation in ball-point. Interior hinges split vol 1, but the three volumes are otherwise quite clean and sound. Very Good.
